#3 – Scombroid Food Poisoning

The best and safest way to consume raw fish is to eat sushi while it’s still fresh and cold.

When fish are not stored in cold-enough temperatures, they begin to decay, forming histamine, which causes scombroid food poisoning. Heating cannot destroy the excess histamine, leading to allergic reactions and anaphylaxis in consumers.

This foodborne illness was to blame for 38% of all the food poisoning outbreaks related to seafood consumption in the US, according to a 2008-report from Food Safety Watch.
